Thyme is a plant that grows abundantly in southern Europe, and has a long history of culinary and medicinal use. The wild thyme plant can grow to about 8 inches in height and is characterized by small greenish-gray leaves and either white or pink/purple flowers.
While thyme is best known for its role as a spice, it is also said to possess a number of benefits because of its cosmetic and therapeutic qualities. To create thyme oil, the leaves and flowers of the plant are steam distilled: the first distillation process yields red thyme, which is often used in perfumes, while the second distillation produces a yellow oil that works well as an essential oil.
